Description

The second best variety from 2013. We call this one Redshift because it comes out of the ground a light pink and darkens to a deep red/purple over a month or two of storage (or more quickly if exposed to the sun). The same transformation takes place inside and out, with the flesh darkening from mostly white to red. At harvest, flavor is sweet and tart. After exposure, flavor brings to mind potato, with almost no tartness and a slightly bitter finish. Red stems and green foliage. Very vigorous plants. Abundant flowerer. Partially red flesh. Yield on par with White and Hopin, but seems to be a little earlier. Better results were reported from some of our trial growers in warmer climates, which seems to be consistent with its Mexican Red parentage.
